GREAT ONLINE COOKIE EXTRAVANGA 2017

THE GREAT ONLINE COOKIE EXTRAVAGANZA IS HERE.




Thank you Jz for hosting this years cookie exchange again, it's  so much fun.  Hope you all have your taste buds ready for some delicious treats. 




So what are you waiting for READY STEADY COOK!

This is my contribution, not made by me though, but Bear.  He is the best cook in our family and loves to tinker with recipes to suit my dietary requirements.  I once had a delicious honey cake whilst out, so he experimented until he could match it. Gosh my man is good, I'm one very lucky girl.    Hope you all like it as much as me.  
                                                  


Honey Cake  



Ingredients:

2 ½  cups of White Wings G.F Self Raising Flour

1 teaspoon of Sodium Bicarbonate

180grams of Gluten-free Lactose-free Spread

1 cup of Raw Sugar

½ cup of Gluten-free Skim Milk

2 - 70gram Eggs

1 cup of Honey



Method:

Place Lactose-Free Spread, Raw Sugar,Honey and Sodium Bicarbinate in a saucepan.

Bring to the boil, then cool slightly.

Gradually add S.R Flour and milk/egg mix to the saucepan, mixing thoroughly, then pour into lined loaf tin.

Bake in the centre of oven @ approx. 180degrees for 1 ½ hours.

Allow to cool before removing from loaf-pan.

  3. Ooooh, I've never had a honey cake - but I'll be remedying that fact soon! We've extended our family and the newest addition is both dairy and gluten sensitive, so having this in my arsenal is great news.

    This looks lovely. Thanks to you and Bear the Baker. :-)

  4. Lindy, you certainly are one lucky girl. For Bear to go to all that trouble just for you says "I love you" like nothing else.

    I try to bake one thing gluten free for my SIL at Christmas. This is it, my friend!
